Mizu Sushi opened in 2008 — a wee sushi-and-udon counter tucked into a downtown Portland building straight out of the movie Metropolis. Four stools, a glass display case, and two women: Ruth and her mom.
Everything is made by hand, the day you eat it. The udon broth simmers each morning. The rolls are cut to order. The portions are generous — a habit Ruth picked up from her mom and has refused to give up.
A complete lunch — twelve pieces of sushi, two cuts of nigiri, in well under twenty bucks. The classic downtown 30-minute lunch.
No tricks, no microwaves, no chain. Just a mother and daughter, a glass case, and rice we cook every morning.

Ruth and her mom have run this together since 2008. You'll see one or both of them every visit. That's the whole staff.
